Bombay Potatoes

Totally syn free and absolutely delicious these spicy side dish is perfect alongside the curry of your choice or even wrapped in a thin omelet as a starter!  Don’t let the list of ingredients put you off, trust me you’ll make this dish again and again as it’s so good.


Ingredients:

600g potatoes (Maris Piper work well as they’re floury)
1 tablespoon black mustard seeds
1 teaspoon paprika
4 teaspoons cumin seeds
1 teaspoon turmeric
2 teaspoons ground cumin
2 teaspoons ground coriander
Garlic fry lite
Fresh coriander to serve (optional)

Method:

Cut the potatoes into bite size chunks 

Bring a pan of water to the boil, add the cubed potatoes and cook for 10-12 minutes (or until tender)

When cooked drain and set to one side, they will continue to steam which is what you want

Spray a large frying pan or wok with garlic fry lite and add the mustard seeds, paprika, and cumin seeds.  Stir fry over a medium heat for a couple of minutes before adding your cooked potato chunks.    

Mix well but be gentle so the potatoes don’t fall apart

Next add the turmeric, ground cumin and ground coriander.  At this stage I gave the potatoes another few squirts of garlic fry lite to stop the seasoning from clumping up

Mix well and serve immediately garnished with fresh coriander
