There’s a real depth of flavours with the garlic,
soy and vinegar – which sounds weird, but it works really well and couldn't really be much easier
I added a teaspoon of honey to give a little
sweetness and some glossiness to the sauce but you don’t have to if you don’t
want, it’s only a syn and between all
these servings in the sauce only so I think it’s easier to discount the one syn
but if you would rather count it to protect your weight loss then please do so
This is a slow cooker dish and because of
that I leave the bone in and skin on. It
makes the chicken fall off the bone tender and protects the meat from drying
out…just remove the skin before eating
Ingredients
4 kg chicken thighs (with skin and bone)
you can use drumsticks too
Garlic frylite
Garlic granules
1 cup white wine vinegar
2/3 cup soy sauce
1 teaspoon honey (optional) 1 syn
1 bulb of garlic (optional)
1 tablespoon whole black peppercorns
6-10 bay leaves
Method
Sprinkle garlic granules on the chicken
Heat frylite in a large frying pan and brown
the chicken pieces in batches
You are NOT cooking the chicken through, that
will happen in the slow cooker; it’s absolutely fine that the chicken will be pink
and uncooked when it goes it the slow cooker – it’ll cook through I promise

As the pieces get a brown skin transfer
them into the slow cooker
When all the chicken is in the slow cooker
mix your white wine vinegar, soy and honey (if using) in a bowl, give it a good
stir to make sure the liquids combine and pour over the chicken

Sprinkle the garlic, peppercorns and bay
leaves evenly over the mixture and turn the slow cooker on low
Cook for 4-6 hours
You do not need to move the chicken about,
it will all cook through and if you do move it you’ll probably find it’ll fall
off the bone as you try!

You can use chicken pieces instead but
please reduce the cooking time and do not brown
Serve with basmati rice

couple of days as the flavours stay intact **
