Chocolate Topped Baked Oat Cookie Cakes

This is very similar to the baked oat muffin recipe, just slightly less yogurt and eggs so it’s more biscuit-y.  I’ve melted Nutella and added a golden egg as a pre-Easter treat.

The Galaxy eggs add a syn to each cookie cake and you can leave them off if you like. 

These cookie are 8 syns for 12 plus topping

Ingredients

40g oats (your heb)
2 tablespoons syn free sweetener

1 egg

1/2 Vanilla Muller Light

1 teaspoon almond essence

2 tablespoons Nutells (8 syns)

12 Galaxy golden eggs (1 syn each)

Method

Preheat the oven to 180 or gas mark 6

Mix all the ingredients together to form an oaty batter

Spoon into 12 silicon bun cases, you won’t put much in as you’re making cookies.  I put in the cases so they stay round rather than dolloped onto a tray but that would work too (just make sure to use a liner so they don’t stick)

When the cookies are still warm put a little nutella on each one, it will melt and you can coat the bun better.  

When cooled add your golden egg (or anything else you prefer)
