Serves 4 hungry people
Ingredients:
For the mash topping:
1kg potatoes
Splash milk
35g grated cheese (your hea option)
For the fish pie filling:
400g pack mixed fish (available at most supermarkets)
100g prawns (big ones can be cooked or uncooked, doesn’t
matter but make sure the tails and any veins are removed)
8 bacon medallions
1 heaped teaspoon mustard powder
Squeeze lemon juice
Splash white wine (optional)
Dried mixed herbs
Few leaves fresh basil
Fry lite
Salt & pepper
Method
Put a large pan of water on to boil
Cut the potatoes into chunks and add to the boiling water,
simmer until soft
Pre heat the oven to 180 or gas mark 6
While the potatoes are simmering, fry your bacon
medallions in a ittle fry lite until cooked through and cut into small pieces about 1cm square (ish). Basically you want them to be small enough
not to look like your stuffing your face when you get some on your fork!
In a large bowl place the fish pie mix, prawns and bacon pieces. Next add your lemon juice, a splash of white
wine (optional), mustard powder and about a teaspoon of dried mixed herbs. I don’t add salt as I think the bacon is
salty enough but I add pepper and finally the chopped basil. It should be slightly wet but not loads of
liquid as the fish is going to steam in the pie.

The potatoes should be cooked by now, mash them with a
little milk until smooth, I use a ricer to make sure there are no 'chunks' but that's just me
Top your fish pie mixture with the mashed potato making sure
to ‘seal’ the edges – so no big gaps around the top. You can pipe the potato on if you like but as
you’re going to cover it in cheese I don’t bother.

Sprinkle cheese on the top and bake for approx. 40 minutes
or until golden brown and the cheese has gone crispy. The fish will be steamed and perfectly cooked
inside

Leave to cool for about 10 minutes and serve with veggies of
your choice
