Wild Rice Salad


This salad is syn free when you use low fat feta as your HEA and no pine nuts.  I tend to add pine nuts for the crunch and taste, please feel free to leave them out or use and syn appropriately
 
Ingredients
Wild rice with basmati
Tomatoes
Red onion or spring onion
Low fat feta (65g per person is a HEA portion)
Lemon juice
Pine nuts (optional)
Fresh coriander to garnish

Method
Cook the rice according to package instructions and set aside to cool
Chop tomatoes into small cubes, do the same with your feta remembering to weigh out your HEA portion
Mix with the cooled rice and add lemon juice, I just add three or four bug squirts for a bowl this size
If you want to garnish with pine nuts please syn accordingly
Sprinkle some fresh coriander on to add colour

 **My Mum makes this and adds chopped cubes of cucumber, personally I don’t like cucumber but this lends itself to that really well if you do!  Just add when you mix in the cheese and tomato **
