Raspberry Ruffles - 1.5 syns each

I used to love these, they're so sweet and coconut (ty!) that one or two is enough to sort out even the biggest sugar craving.

This slimming world friendly version is exacly the same and to be honest apart fom the fact that mine are far more rustic than the originals, they don't taste much different to me.

Apologies for the after pic - I admit that in the dark with prosecco isn't very helpful but we forgot to take the photo at the end!!!

Ingredients:
150g desiccated coconut
1 sachet sugar free raspberry jelly
8 tablespoons light condensed milk
100g dark chocolate

Method:
Mix coconut and jelly powder (DO NOT MAKE THE JELLY UP)
Add condensed milk
Mix well
Slimming World friendly raspberry ruffles

Using damp hands (stops the mixture sticking to your fingers) make the ruffles into little balls and place on a baking tray, or you can just tip all the mixture in a baking tin and press down firmly if you'd prefer - just cut into squares - uses less chocolate that way.  I'd suggest lining the tray with cling film first though so the ruffles don't stick

Melt the chocolate either in the microwave or in a bowl over a pan of boiling water (make sure the boiling water doesn't hit he bottom of the bowl, you're using the steam to melt the chocolate)

Drizzle melted chocolate over the ruffles

I dipped mine in chocolate which first of all made them delicious but secondly used a lot more chcolate (and therefore they were higher in syns) and also meant I had six chcolate ruffles and six naked ruffles - so drizzle!

If you want to make in a tray you can just pour the melted choclate on the top

Put in the fridge to cool and serve (maybe not with prosecco!)

Low syn raspberry ruffles (made in an ice cube tray - less rustic!)

2 syn raspberry ruffles and 8 syn prosecco!!
