Technically this isn’t a recipe, it’s a meal
suggestion but when I came to make this I realized that I had no idea how to
make the ‘bun’. Clearly I know to get two
mushrooms but there’s loads of different suggestions online including leaving
or removing the gills so I thought I’d put this down to make it all clear.

You can make your own burgers from scratch
but it was hot and I’d been at work all day so I used Slimming World chimichanga
burgers which were surprisingly good!
This is how I made the syn free mushroom
bun burger meal
Ingredients
4 large portobello mushrooms
Fry lite
2 syn free burgers
Red onion
Potatoes
Salad
Cheese (part HEA)
Method:
Cut potatoes and put in air frier, lots of
fry lite at this stage and close the lid.
You will reapply later but for now cook them for 10 minutes
Chop red onions and put in a pan with fry
light, you’ll cook these towards the end so the onion is caramalised but hot
still
Twist the stalks off your portobello
mushrooms. Do not remove the gills. Place them gill side UP on the baking tray
and spray with fry lite
Pop the oven on to pre heat
Pop your burgers in a large frying pan, or
on the BBQ if that’s how you’re doing them
That should have taken you about 10 minutes
so it’s time to check the chips. Give
them another really good covering of fry lite at this stage as you’re going for
as crispy as possible which mean fry lite and hot inside, so not too much lid opening! They will good for another 12 minutes now
Put your mushrooms in the pre heated oven. They will take about 10 minutes to cook
Turn on the heat under your onions and stir
occasionally as needed
Watch the burgers, turning to cook
thoroughly
Get the cheese ready, whatever you fancy,
just please check your HEA
Now put salad on the plates, all this time
keep checking that your onions have enough frylite and your burgers are ok
You’re now ready to assemble but before you
do open the air frier and give the chips a quick mist of frylite and a shake of
chip or grind over some sea salt it stops them being bland and also the
seasoning will only be cooked for a couple of minutes so won’t burn. You can add fresh rosemary as well here if
you like, it’s perfect for rosemary and sea salt fries
Mushrooms out of the oven, they will have
shrunk and water cooked out but don’t worry, that’s usual
Layer a mushroom, burger, cheese, onions
and top with the second mushroom
Add the chips straight from the frier so
they’re piping hot et voila. You’re all
set with a syn free burger and chips!
**There are syns in tomato ketchup but I
didn’t have any 😊
