Low Syn Afternoon Tea

My best friend and I always have dinner together on a Friday and have for years.  We met at Slimming World and have experienced the highs and lows of weight loss, gain and everything else thrown at us over time so we both missed our weekly food adventures and catch ups

Last weekend she came by for a cup of tea outside where we could socially distance catch up and I surprised her with a mini afternoon tea and prosecco.  I love that she has one glass and I have, well I drink the rest.  This helps make an excellent friend!

My decision to do the afternoon tea was a bit last minute and I went for the ever beloved baked oat muffins cooked in heart shaped buns.  These are almond flavour with Nutella hidden inside (her favourite) and I whipped up a batch of potato poppers which I’ve not done literally for years.  These had some low fat cheese and half a slice of salami inside but they can be made veggie friendly with roasted peppers, a herby garlic cheese or even cheese and tomato with basil to make mini pizza bites

Regardless, it was lovely to catch up, enjoy the sunshine and have a low syn afternoon tea

Syn Free Keema & Peas

I love curry especially on miserable days like today and quite often I get bored of the same old chicken curry with veggies, blah blah so I wanted to make a keema as it’s a really tasty, dry curry that makes me eat peas.  Which I hate but I know I should give them a chance (ha ha)

Problem I found with keema is that it was always too soft so I spoke to the lovely chef at the Indian restaurant I go to who gave me some great pointers and whilst it’s never going to be as  good as a full on lamb keema cooked in ghee this is a really tasty curry that’s quick to make, you can freeze it and everyone I tried it on loves it!

Low Syn Raspberry Ruffles

These are amazing, they taste just like the real thing and are only 1.5 syns each.  I’ve made them a few times now and have to admit that using an ice cube tray is by far the best way to do it, my first goes were just blobs and very rustic – plus they were so huge it was less syns to have the real thing!

I think these are nicer than the real ruffles as they have more texture, a couple and you really feel like you’ve had a proper sweet treat
