For the sponge:
2 eggs
1 tablespoon sweetener
1 teaspoon vanilla essence
25g self-raising flour (4 syns)
For the orange layer:
1 sachet sugar free orange jelly (1.5 syns)
1 teaspoon orange essence
Chocolate topping
Choc orange choc shot (1 level teaspoon per jaffa cake =
0.5 syns)
Total syns for 16 = 13.5 which is about ¾ a syn each
Method:
Preheat oven to 170 or gas mark 3
Put eggs, sweetener and vanilla essence in a bowl. Using an electric whisk, whisk for about 5
minutes until the mixture has doubled/trebled in size and is thicker. You’ll know its thick enough when the whish
prongs leave marks in the batter. It
really does take about 5 minutes so be patient!
Add the flour and gently fold through with a metal spoon, be as delicate
as you can to avoid knocking he air back out
Spoon the mixture into a muffin tray. If you’re confident in the nonstick go for it
but I gave mine a light spray with fry lite first. It’s a good spoonful per sponge base, maybe
two spoons full. I got 16 out of my
mixture.
Bake for about 10 minutes or until lightly golden brown
While the cakes are baking it’s time to make the orange
layer. I used Hartley sugar free jelly
crystals and added a teaspoon of orange essence for a flavor boost. Add ¼ pint boiling water and whisk. When the crystals are dissolved add ¾ pint
cold water and whisk again. I put the
jelly in silicone bun cases to make sure they were lovely and round, then put
them in the fridge.

When the sponges are cooked put on a baking tray to cool,
flat side up as this will be what you put your jelly layer on
Leave the sponge to cool and the jelly to set. Probably an hour or so
Pop the jelly out of the moulds and place on the sponge base |
When you’re ready, pop the jelly circles out of our silicone
molds and place on the sponge bases and you’re ready for the chocolate!

Just
squeeze chocolate orange choc shot onto the top (or add from a spoon to
measure) and smooth with the back of a teaspoon. Out them in the fridge to chill and set
slightly and serve when you’re ready!
At 3/4 syn each I can have all of these instead of one 'normal' jaffa cake - don't mind if I do!! |
