Syn free lamb with orzo

This syn free meal was a special request from my best friend, it was her birthday and she had no idea what she wanted so I was throwing ideas at her and when I suggested lamb and orzo she immediately said it was what she wanted, so that’s what I made!

As it was her birthday I used more feta and pine nuts than maybe I would usually as I think they make the meal really tasty but you can use as little or much as you choose.  I would highly recommend keeping the fresh coriander though as it gives a nice fresh lift to the meal

Raspberry Ruffles

OK, these are not syn free and are 1.5-2 each depending how much of your chocolate you use on each ruffle BUT they taste almost exactly the same as the real thing and they’re so sweet you can’t eat more than a couple anyway
 
They’re amazing for a sweet fix, last a good week in the fridge and they’re something different that won’t break the syn bank

I’ve made these before and the first time I did they were much more rustic than this effort (aka blobs of mixture with chocolate poured on top!) and I have to be honest, it was not my idea but someone far smarter than me made them using heart shaped ice cube/jelly moulds.  Just put some melted chocolate in the bottom of each shape, squash in your ruffle mixture and press, it will force the chocolate up the sides which ‘cover’ it.  Sort of covering in reverse!  

This is definitely worth a try if you’ve got a taster or are having people round or just was a really sweet hit.

Hunters Chicken

This is one of my Mum’s favourites so I’ve been practicing how to make a syn free version for us to enjoy and I’ve finally found it!
 
I’ve used my home made, syn free BBQ sauce to keep syns out and taste up, with taste in mind I chose to use chicken thighs instead of the traditional chicken breasts but that’s just because I prefer them.

The result was a really tasty meal that felt like it was decadent when it wasn’t.  You can serve with whatever you like but I chose to serve this with roasted Mediterranean vegetables that included baby potatoes – so filling

Syn Free BBQ Sauce


It’s taken me literally years to force myself to make this instead of synning the bought stuff all because I don’t love balsamic vinegar and (mistakenly) thought that would mean this was nasty.
Long story short, I was totally wrong and this is absolutely delicious!

This syn free BBQ sauce takes about 10 minutes to make and lasts a couple of weeks in an airtight container if you pop it in the fridge (when cooled).  I used this recently as a sauce for hunters chicken and it was absolutely delicious – big hit in my house!

Chicken Fried Rice


I admit that to most people this is a side dish as part of a Chinese meal but not me, I love this as my dinner if I’m heading out to the gym or need to use up leftovers.  It’s super quick, syn free and very forgiving with ingredients, you can use fresh or frozen and switch them about to suit really.

Also I always make my egg omelet rather than add the egg to the rice – that way never works for me and always turns into a nasty clumpy mess.

You could change the chicken for prawns, tofu or just have the egg fried rice if you’d prefer…whatever you have to hand.
