Syn free cous cous muffins

We talked about these in class last night and how they’d be a great alternative to the baked oat muffins as you’d still have your HEB to use later in the day.   I admit it, I pulled a face at the idea, sounded absolutely minging if I’m honest but the idea of still having my HEB to use later in the day spurred me on to try them and, truth be told, they’re absolutely great!  I made lemon and blueberry as I've a load of blueberries to use up but you could pretty much do what you want flavor wise.

They’re probably a slightly lighter texture than baked oats, the cous cous being less dense than porridge oats but overall not a lot of difference.  Only thing I’d say is they could maybe do with more flavouring than baked oat muffins but that may have been my choice of lemon as it’s slightly more subtle than almond or salted caramel.


Cous cous muffins work out at 0.25 syns for all 6 (I don't syn 18 cooked blueberries, but plese feel free to) which is 0.04 per muffin to be exact.  I sounds ridiculous saying that so I've gone with syn free but if you want to count it all - including the blueberries - then I'd suggest 0.75 of a syn for all six

Jerk Chicken – 1 syn per portion

Eating healthily has ever meant compromising on flavor for me, and I love an easy meal so this 1 syn jerk chicken is a definite favourite!

Basically it’s a case of shove everything in a bag in the morning, leave it all day and pop in the oven when you get home.  While you’re doing whatever you need to the chicken will cook away and 45 minutes later you’ve hot a super tasty, homemade, almost no syn diner and any leftovers will be amazing on a salad the next day.

 It doesn’t get much more straightforward! 

If you don’t like chicken on the bone you can do this will diced chicken breast, it’ll just need cooking for a slightly shorter time that’s all - you won’t lose any flavor.

Boozy Baked Oats – Syn Free!

I have baked oats with a big bowl of fruit for breakfast pretty much every day and love it.  All sorts of flavours but last night I decided to try something new and made boozy ones for an after dinner treat.

It’s the same basic recipe as I always use but these were prosecco, gin & tonic and pina colada.  I topped all three with a quark/white chocolate options shot/sweetener combo, piped and decorated which made them 2 syns for all six.  If you want to syn the cooked please feel free, as there were two raspberries and two chunks of pineapple I didn’t but that’s my choice.

To make them mixed like this I did one plain vanilla baked oats mixture, divided into three bowls and flavoured each bowl differently to give two buns in three flavours.

Something different and definitely worth the effort!

Syn free Weetabix cookies

Warm Weetabix cookies are the perfect way to start a cold Sunday morning.  These are made with mixed fruit which adds 3.5 syns for all 7 but I think that’s a really good use of a few syns.

Chocolate orange scan bran muffins

OK, we all tried scan bran hoping it would taste like a delicious cracker but sadly no, I always think it tastes like a cross between a piece of cardboard and shoe leather.  Clearly that aside every so often it’s worth giving something a go with this challenging ingredient and I think I cracked it and at only 1 1/2 syns each they're a great use of your allowance.

1.5 syns each for my chocolate orange scan bran muffins

These chocolate orange muffins are actually really good.  They’re quite dense and have a nice consistency, plus there’s the added bonus that the orange comes through and they taste pretty good.
I make them when I’ve got SW friend coming over as a serving is too much bran for one person (well, I think so!) and with that in mind I tend to make a batch and everyone has a couple.

Syn free pawn and rice lettuce cups

These are super quick and easy to make, syn free and look great – what more you can you ask for?!

From start to finish you can have this meal on the table in 15 minutes flat, that includes cooking and chopping everything from scratch – got to be quicker than a takeaway and definitely much healthier!

Whilst I’ve done prawn and veggie rice here you can make this whatever you like, any combination of meat and veggie that works for you (or no meat if you’d prefer).  It really doesn’t matter, combine with the soy for a tasty flavor and use up your leftovers.

1 syn Meringues

These shouldn’t technically be here as I didn’t make them (clearly as they’re perfect!) but as a go to super low syn pudding or sweet fix they’re amazing

1 syn meringues with white chocolate filling
Each ‘half’ of the meringue is 0.5 syns.  I made an almost syn free filing my mixing vanilla quark with a sachet of white chocolate options and a tablespoon of syn free sweetener.  Split between them all the syn value is negligible so I’m sticking with 1 per double cookie. 

Just mix the quark, options and sweetener in a bowl and using a teaspoon dollop onto one half

Sandwich with the other and you’re good to go.  They need to be served pretty much straight away or they’ll go soggy but with fresh berries you’re all set for a super sweet sugary hit with almost no syns

I bought mine at Morrisons, not sure where else stocks them - they were in the gluten free section, as they’re one of the only things with any colour in there you can’t miss them!

Slimming World Yorkshire Puddings from a Yorkshire Girl!

Anyone that knows me knows I’m from Yorkshire and as a good Yorkshire girl refuse point blank to ever use frozen Yorkshire puddings.  Why on earth would anyone use them when you can make the real thing quickly and easily and they are SO much better.  Not just a little bit better but a whole lot.

Don’t worry about the hot oil part of making Yorkshires.  If you do it my way you don’t ever take the muffin tray out of the oven when it’s hot – you take your batter to the oil.  Much safer and easier on your hands!

Being on Slimming World doesn’t mean you can’t have them, for me they’re the best part of any roast meal, it just means you have them within your syn allowance and these are the perfect go to recipe.  1 syn each and they’re awesome, in theory I can have 15 – now that might be worth a try!  Not one person I’ve made them for has anything but good things to say about this version and to be honest I don’t think it’s crossed anyone’s mind they’re a healthier version of the traditional recipe.

You can serve alongside our favorite roast, with syn free gravy or you can add sausages and make toad in the hole.  Whatever you choose to do I know you’ll love them.

You can make the batter a couple of hours in advance if that helps you plan your timings, if I do I pop in an airtight container.  Just give it a quick whisk again before going in the oven.

Chocolate Orange Caramel Panna Cotta

These panna cotta style puddings are super easy to make and can be done well in advance of your dinner, the longer in the fridge the better!   

1 syn chocolate orange caramel panna cotta (with chocolate chunks!)
They’re a soft texture and adding the chocolate chunks really gives a bit of a bite, so for the extra ½ a syn per pudding I do recommend.  This looks like I had portion control, after testing this one my friend and I had another two each they were so good!!!
