Tie-dye Yoghurt Bark

Yes, traditionally yogurt bark is easy but it’s not very exciting to look at so I’ve mixed it up (literally) with some food gel and fruits/treats so it’s more fun.  Fruit will be syn free but sadly adding jazzies is not, but they taste amazing!

I would say get the kids to help but I know the mess I made doing these, they’re quick and easy but a bit of a washing up wonder and food gel has a habit of doing its own thing so maybe this is one for you to do the night before, pop in the freezer and surprise the kids with the next day
Note:  big kids like these too!

Keema Style Curry & Peas

I love most curries and this is no exception, keema and peas was a struggle for me until I asked the lovely chef at my favourite Indian restaurant where I was going wrong and he told me not to overcook the keema.  He said he stir fries it with the spices and his is delicious.  Now, his may be delicious because he’s an excellent chef and because he’s using things like ghee that I don’t add but this is a quick, easy and tasty way to have a syn free keema and peas

You can serve with boiled rice but this is also great on a baked potato with a side salad if you’d like to kick up your lunch

Keep Cooking!

OK, everyone is reaching for the fridge door, the wine, chocolate or maybe all or it – including me – and while I’ll all for being kind to myself I’m going to have to step up and focus or buy a new wardrobe so it was time for some time in the kitchen and prepare some of my favourite healthy options to get back on track

Low syn bulk cooking
I like to multitask but I also like to make things that use a lot of the same base ingredients so I can use ingredients up and also only do jobs once

You’ll see that I made keema and peas but also spicy rice to get rid of the frozen peas plus I made a slow cooker kebab to use the other half of the mince from the keema.  It just makes sense to me to do as much as I can at once and have more time to enjoy it

So in an hour I’d made a doner kebab and popped it in the slow cooker to do its thing, I’d got rice simmering, chicken baking in sauce plus a pot of keema on the stove; quick clean down and I made two types of baked oat muffin:  orange and cranberry with pumpkin seeds and banana nut walnut with a  few sultanas.  OK, they are not the healthiest versions of the baked oats but I figured that was ok!

As you can see, there’s absolutely loads there and apart from the oats it can all be frozen (once cooled) and I’ve mix and match meals for days!

If you’d like to try and of these meals just take a browse through the site and I’ll link to them above

Chocolate Chilli Bites

These little bites are such a favourite in my house, they’re little gooey bites of choclate-y goodness but with a kick and to have something like that when you’re eating healthily is just amazing

They’re less than a syn each (3/4 each to be exact) and are perfect when you need something that’s more like a standard cake texture

You can adjust the chilli to your personal taste but personally I like to throw in a few finely cut fresh chillis just to keep it interesting!

If you want to try the low syn chocolate chilli bites the recipe is here

Enjoy,
