Syn free egg fried rice & pork teriyaki style

I’d seen this presentation concept online somewhere ages ago and it’d stuck in my mind as a great way to serve my Friday Fakeaway.

I was worried about the amount of rice I’d need to make but my Mum told me to just fill it to about ¾ and press it down firmly, leave it a few minutes to ‘set’ and I’d be fine.  She was, of course, correct (as she always is) and I only used three bags of rice.  

It’s not difficult to do and is a real wow way to serve what is basically an everyday meal.  It’s also cheap, I used three bags of Tesco rice and some frozen veggies.  Nice to have a go to side dish that’s inexpensive and quick.

You can put whatever you like in it, I made pork teriyaki style (3 syns and recipe is here) but it would be amazing with a Mayflower curry, a stir fry, any of the Chinese fakeaway and could even be tweaked to be an Indian inspired dish – maybe I should try that next!

Lamb Kleftico – slow cooker version

This is a traditional Greek dish that’s slow cooked for hours.  It is absolutely melt in the mouth delicious and a joint favourite for my Dad and I.  Usually one of us makes it for the other on a special occasion and even better it’s syn free!

It was my turn to cook for him and I always do the biggest lamb leg I can, this time that was an absolute cooking fail as it didn’t fit in the frying pan to seal or in the slow cooker.  My trusty hammer and a knife sorted that out but I strongly urge you to not be like me and measure your lamb leg before you start.  Or buy a hacksaw.

Rather than waste the potatoes I chose to cook them as the lamb was resting, I put frylite in the pan and ground sea salt over the potatoes and cooked them in a hot pan to brown/crisp the outsides.  They were delicious.
