Cheeseburger Stuffed Peppers


This syn free recipe is almost too good to be true!  I was going to make stuffed peppers but a poke about the fridge inspired me to try something a little different.  

They take a while to cook and you have to prep the cheeseburger mix so this is not one of my speedy specials but it is a crowd pleaser!

I had this as a light lunch, if you were having for dinner adding Slimming World chips or potato wedges would be a great idea

Ginger Nut Granola

Very unusually for me this is not a Slimming World recipe.  This is however still what I would consider a heathy breakfast (although I often have it for dinner) as personally I believe that nuts and seeds contain oils essential for all round health.  Regardless, home made granola is absolutely delicious, sweet and salty with only natural ingredients and no sugar…what more can you ask for

I often have this granola with almond milk before the gym as it’s made up of slow release carbs and protein from the nuts but doesn’t sit heavy as I go after work so it’s quite late

The lunch time dilemma

As many of you know I’ve been following the Slimming World cooking style for years now and I’d stared to struggle with something different for lunch.  

I’ve pretty much had every leftover, low syn wrap and soup I could think of but really wanted to make something new but it couldn’t take forever as I’ve been trying to get to the gym so this had to be simple, quick and tasty.

This chicken, sausage, feta and pesto pasta salad absolutely hits the spot.  It's basically the contents of my fridge jazzed up and put in lunchboxes and I have to say was the best lunch I've had in a while.

You can use whatever you like, steak and blue cheese, roasted Mediterranean vegetables and feta, even sausage and roast peppers. The list is almost endless, whatever you like and whatever's lurking in your fridge.

If you want to try a pasta salad for lunch I'd highly recommend giving this one a go

Curly Wurly Brownies

Now I’ll be honest, I make double the batch size most people do and I’m not apologizing for it.  When I started out with 50g flour I looked at the sad little covering at the bottom of the bowl and decided that wasn’t going to make what I would consider a brownie and if it isn’t a proper brownie then I wasn’t interested.  Hence a double sized batch which gives you a decent amount of deepish brownies.

They come in at 2 syns each but my dodgy cutting (non) skills means some were more like ½ a syn whilst others a good 2 ½ but they were the closest brownies I've had with a low syn recipe.
