Note: I like mixed
spice and add quite a lot, if you’re not so keen please use a little less.
Ingredients
40g oats (HEB)
2 medium eggs
3 tablespoons sweetener
125g fat free quark
½ an apple (I used a granny smith because I like them)
25g raisins (3.5 syns)
3 teaspoon mixed spice
1 teaspoon vanilla essence

Method
Spray your silicone (or any microwaveable) bowl with
frylight and set to one side
Measure out your oats and add all the ingredients except the
apple, give a thorough mix until everything is evenly distributed
Cut your ½ apple into 1cm ish cubes, you want them to cook
slightly but not become mushy so they don’t want to be much
bigger/smaller. I do this at the end to
stop the apples going brown while I’m faffing about.
Add the apple cubes to the mixture and pour into your
microwaveable bowl. It looks a bit of a
sloppy mess but don’t worry, it firms up!
I've found moving any big chunks of apple away from the edges a good idea, only because it helps the sides stay intact and the flapjack not crumble at the edges if that makes sense? It doesn't matter from a cooking/flavour standpoint it's more of a cutting comment!!

Microwave on medium (my microwave has temperatures and I use
600) for about 5 minutes, the flapjack will come away from the sides. Don’t overcook it or you’ll end up with a
brick

You can make this flapjack without the apples if you prefer,
it’s just as good.
This cake keeps for about 3 days in an airtight container, perfect with some fruit as a different, low syn treat

I don’t syn cooked fruit so the whole thing is 3.5 syns when
using the oats as your HEB. If not
please add the syns

I used almond essence for this version...really tasty
Blackberry & Apple
I cut the blackberries so they were small enough not to make the flapjack fall apart...again really good!
Ginger & Sultana
This version doesn't have fruit and is very close to normal flapjack. I added 1 tablespoon ground ginger (add more if you like it!) and some crystalised ginger cut finely. I like the heat of the ginger and the sultanas were a good balance. I added 2 syns for the crystalised ginger and cut the cake into about 10 small slices. Perfect with a cup of tea!
