Make them as spicy as you like too, however
you want the pakoras – this recipe is very forgiving
Makes 8 syn free pakoras
Ingredients
1 can chickpeas drained and washed
3 large eggs
1 red onion finely chopped
½ green pepper finely chopped
Handful sweetcorn
1-2 tablespoons curry powder
Frylite
Lemon, chilli and fresh coriander to
garnish
Method
Drain and wash your chickpeas and put in
a small food processor
Use washed and drained chickpeas for your pakoras |
Add your eggs one at a time to make a
chunky batter mix
Put the chickpea and egg mix into a bowl
and add whatever veggies you want, just make sure they’re small bites not big
old chunks

Add your curry powder, I needed two
tablespoons as this makes 8 pakoras and I didn’t want them to be bland. The chickpeas take some flavouring but if you’re
unsure add less and fry off a little dollop of the mix as a taste test – much better
to do that than make eight that taste of nothing or blow your head off!
Spray a large frying pan with lots of
fry lite and add the mix in even sized portions. I kept adding fry lite so they didn’t dry out

When the pakoras are cooked on one side
carefully turn them over, I put another squirt of fry lite under them again to keep
them nice
As the pakoras are finishing cooking
chop your chilli, lemon and onion
Serve the pakoras immediately with the
garnish either as a starter, lunch or even a side with your curry
