Chicken & Chirozo Pie


I was away with work the other day and left to my own devices for the evening which meant dinner and a glass of wine.  There wasn’t anything especially SW friendly on the menu, so I opted for a low calorie option which quite oddly to my mind was chicken and chirozo pie.  Advertised at 600 calories I had my doubts but it was really good and I vowed to try make my own version as SW friendly as possible

This is not a super low syn recipe like I usually make BUT it is really, really decadent and I wanted to try it.  The pie comes out at 8 syns a person but that’s a really big portion and I couldn’t finish it
Let me be honest, it’s very, very worth the syns for a different meal

You can make it far more syn friendly by swapping the chirozo for bacon and adding a little more paprika, that'd bring your pie in at only 4.5 syns

Makes two big pies or four smaller portions:

Ingredients
4 large chicken thighs roasted and shredded or 1 chicken breast
70g chirozo cut into tiny cubes (7 syns)
1 red onion thinly sliced
Cheese sauce packet mix (2 syns)
Bob milk (from HEA)
1 heaped teaspoon Italian herbs
½ teaspoon paprika
Garlic fry lite
2 sheets of filo pastry (3.5 syns per piece)

Method:
Shred the cooked chicken (you can use leftovers of roast some specifically for this meal)

 Pan fry the chirozo and onion together until browned, set aside


Make the cheese sauce according to the packet mix.   When the sauce is made turn the heat to low and add the cooked chicken, chirozo and onion mix, paprika and Italian herbs, stirring gently to warm and combine all the pie filling ingredients.  Ignore the fact it looks disgusting, bear with it.

Put the filling into your dishes and crumple a sheet of filo pastry on the top – I was careful to not have any edges sticking out as when crisp it can be quite sharp


Spray with fry lite (I used garlic) and bake at gas mark 6 (180) for about 30-40 minutes or until the pastry is golden


Serve with your choice of syn free sides!
