Lamb with Orzo


This syn free meal is rich and tasty - especially popular on a cold day.  As if that wasn't bonus enough it only takes about 12 an hour from start to finish to make this really impressive meal

The quantities here serve six people but you can freeze any leftovers

Ingredients 
600g lamb, cut into bite sized chunks with all visible fat removed
2 red onions finely cut
1 pepper deseeded nd cut into bit site chunks
1 carton passata
1 litre lamb or beef stock
2 teaspoons garlic granules
3 teaspoons dried oregano
400g orzo
Fry lite

Optional to serve (syn as appropriate if using)
Feta cheese/ pine nuts/ fresh coriander

Method
Spray a heavy bottomed pan (that you have a lid for) with fry lite and over a medium to high heat brown the lamb

Once lightly browned remove from pan and set the lamb to one side

In the same pan, spray with frylite again and cook the onions and pepper until slightly softened, should take about 5 minutes 
 
While the onions and peppers are cooking make up your stock

Once softened, add the stock, lamb, passata and herbs to the pepper and onion mix and stir to combine evenly

Add the orzo, bring to a simmer then reduce the heat and cover cooking for the amount of time indicated on the orzo packet which will be about 15-20 minutes during which time the sauce will thicken

I stir mine occasionally to make sure nothing sticks to the bottom of the pan

As your meal is cooking you can prepare any of the garnishes you want to use.  If you’re using feta from your HEA allowance you can crumble and set to one side.   I also added pine nuts and fresh coriander that was roughly chopped

When your orzo is cooked serve immediately with the garnishes of your choice.  This meal is great when served with wilted greens or asparagus
