Don’t be afraid to really stuff the pepper
with layers, it adds to the flavour and for me it makes them really filling!
I’ve made two peppers here (as you can see)
but there was at least half the mince left over so I scaled up the ingredients
below to make four but you can adjust. I
simply added a tin of Tesco spicy taco beans and some chilli flakes to the
remaining mix (syn free) to make a chilli the next night.
Ingredients
500g 5% lean mince
Worcester sauce
Hot sauce
Italian dried herbs
Salt & pepper to taste
4 cups frozen red onion and sliced mixed
peppers
Grated cheese (type and amount dependent on
your HEA allowance and choice)
4 peppers
Frylite
Method
Pre heat oven to 180 or gas mark 6
Cut the tops of the four fresh peppers and
remove the seeds/insides. Wash and set
to one side
In a large frying pan brown the mince
adding Worcester sauce, hot sauce and herbs to taste. You want a dry meat mixture but if you
normally use other herbs, or you like chilli flakes for some spice feel free to
add your favourite.
Once browned, set the mince mixture to one
side and lightly spray the same frying pan with frylite. Cook the frozen peppers and onions on a
lowish heat, you want them more sautéed than frazzled
Once cooked through set to one side
Grate your cheese and set to the side
Now you’re ready to fill the peppers.
Spoon the mince mixture in first, pressing down
when you have a good heaped tablespoon in there. Add the onion and pepper mix then layer with
a sprinkle of cheese.

Cover the dish with foil and bake for 35 minutes. Stuffed peppers take longer to cook than you
think and you don’t want them to be hard bullets inside, the foil will stop
that happening
Remove the foil and add layers of grated
cheese before returning to the oven for 15-20 minutes until the cheese is
melted and golden and the peppers cooked through

Serve immediately with salad, you can add
potato wedges or syn free chips if you like.
