These may be the most decadent baked oats I’ve made so far
and surprisingly they’re still good on the syn front coming in at 2 syns per
muffin when using your HEB
You need to use 1 ½ days HEB as 40g oats isn’t enough with
the other ingredients and me telling you to use half a banana and 2/3 of a yoghurt
is just silly so it’s more oats but I’d suggest these baked oat muffins would
be something you make when people come over
Note: they are much better on the day of cooking, I stored
the muffins in the fridge overnight and whilst they were still really tasty the
next day the Oreos had gone soft so the crunch was gone. The taste was still there though!!
I’d highly suggest giving them a try, these quantities make
8 muffins and I’m giving them a syn value of 2 syns per muffin which is 1.5 for
the Oreo and fractions for a portion of yoghurt and baking powder BUT that is
when the oats are your HEB so that is for 6 muffins, if you eat all 8 you’ll
need to syn the oats and also tell yourself off as 8 is a lot of Oreo muffins
in a day!!
Ingredients
60g oats
1 tablespoon syn free sweetener (Sukrin is best)
1 teaspoon salted caramel essence (or vanilla if you prefer)
1 mashed banana
1 pot vanilla and chocolate sprinkles Muller Light (1 syn)
3 eggs
1 teaspoon baking powder (0.25 syns)
Pinch of salt
4 oreos (2.5 syns per oreo so 1.5 per muffin as it’s only ½ an
)
Method
Preheat the oven to 200 degrees
Mash the banana in a bowl, add the yoghurt, eggs and salted caramel
(or vanilla) essence, mix until all the ingredients are combined
Add your dry ingredients so add the oats, baking powder,
sweetener and salt stirring everything until combined
Put the mixture into your muffin cases, I only use silicone
cases as they don’t stick never use paper as you'll end up with half the muffin left stuck to the case

Crush your Oreos in a bowl or bag and sprinkle on top of the
muffins, you’ll have half an Oreo per muffin and it’s amazing how fat that goes
when they’re crumbs
Bake for about 30 minutes, or until cooked
You can pretty much eat them as soon as they’ve slightly
cooled – they’re best still warm from the oven.
As I said, the Oreos do soften overnight but the muffin stays really
moist and they still taste amazing
