Potato, Leek and Gammon Soup


This recipe is syn free and made in a slow cooker, I did not try it in my soup maker as I went out and anted to leave the soup to infuse.  

The recipe was originally from Pinch of Nom, who have some amazing ideas and if you would like to visit their site (which you really should if you haven’t) the link is: http://pinchofnom.com  I changed the recipe a little mainly as I wanted to make a bigger batch and served with crispy bacon bits for a little crunch and a lot of flavor!

The is the perfect go to soup for winter and keeps for a good 4-5 days in the fridge

Makes 10 portions

Ingredients

5 leeks
450g gammon steaks, cut into bite size pieces with all visible fat removed
2 kg potato cut into chunks
3 liters chicken stock
1 teaspoon chicken seasoning
Frylite
Bacon for garnish (optional) all visible fat removed

Method

Cut the leeks into discs and place in frying pan, spray with frylite and lightly saute.  When they start to soften put into slow cooker

Peel and cut the potatoes, big bite sized chunks works best.  Do not cook the potatoes, just put them straight into the slow cooker

Cube the gammon into small bite size chunks, removing visible fat as you do so and place in the slow cooker

Make up your chicken stock.  I used two stock jelly pots in the three litres of water as gammon is salty and I didn’t want it to be too much
 
Add a teaspoon of chicken seasoning for added flavor

Cook on medium for six hours but after five taste it and adjust the seasoning to suit your taste, if it’s too salty add boiling water and not enough a little more chicken seasoning

Serve immediately 

You can add crispy bacon pieces like I did if you like, just cut and cook on high with frylite just before serving your soup
