Beef Stew – Slow Cooked Asian Style


This slow cooked beef is super easy and packed with flavour.  There’s a couple of ingredients that have syns but whe you divide that between each portion it works out at only 2 syns per person which is really low for something as tasty as this.

The cooking time is quite long but as it’s in the slow cooker it’s no effort at all and as if that wasn’t good enough none of the ingedients need pre-cooking.  The most you have to do is boil the kettle to make stock!

Ingredients:

750g cubed beef all visible fat removed
1 tablespoon flour (3.5 syns)
1 teaspoon toasted sesame oil (2 syns)
4 tablespoons soy sauce
1 tablespoon honey (2.5 syns)
½ cup beef stock
4 cloves of garlic minced
2cm cube ginger grated
3 red chillis finely chopped
1 each of red, green and yellow peppers cut into bite sized chunks
4 small red onions sliced
6 or so muchrooms sliced
Spring onions and red chilli to garnish

Method:

Remove any visible fat from the cubed beef and put in a bowl.  Add flour and turn the beef so it’s lightly coated

Put the meat straight into the slow cooker – you do not brown or pre-cook in any way

Turn the slow cooker on low, you will cook this for eight hours overall but if you’re short on time you can do this on high for four hours

Add the Asian style stock and spices to infuse the slow cooked beef
Now combine the flavour ingredients for the beef sauce:  make the stock first, I use a stock pot and ½ a cup of boiling water.  To that add the soy sauce, sesame oil, honey, garlic, ginger and chillis.  Give it all a stir and pour over the beef, pop the lid on and just leave it for six hours (three if you’re doing the high option)

With two hours to go before you want to eat it (or one hour if you’re cooking on high) add the chopped peppers and onions.  Give everything a good stir and put the lid back on

With an hour to go (or 30 minutes if cooking on high) add the sliced mushrooms, give everything a mix and put the lid back on


Nothing needs pre cooking, it jus needs adding in stages so the vegetables don’t get overdone

When time is up serve immediately, I served with plain boiled rice and a sprinkle of sesame seeds
