Eaton Mess


This pudding is only ½ a syn per portion before you add the meringue which means you can add as many or as few as you like to use your syns  

I used 2 syns worth or crushed strawberry meringues with this version but froze what was left in lolly moulds for an (almost) syn free treat

This makes two portions 

Ingredients:

2 Muller Light – Lemon Tart flavor (1 syn for both)
1 tablespoon syn free sweetener
Juice and zest of 1 lemon
Frozen fruit quantity to taste, I used about a cup of frozen summer fruits (Tesco)
Meringues (crush and add just before serving)


Method:

In a bowl mix the yoghurt and sweetener

Add the fruit

Using a micro grater grate the lemon zest so it’s the tiny bits and squeeze the lemon into the mixture (catch or fish out any pips!)

Do not add the meringues yet

Put in a tub and freeze 

Depending how hot it is in your house, take the frozen mixture out about 30-60 minutes before you want to eat it so it softens and layer with crushed meringues (if using) just before serving to make sure they don’t go soft.  I added some gold dust stars too...

Et voila, that’s it – your low syn easy Eaton Mess is ready to be served
