Chicken, Sausage & Pesto Pasta Salad

You can use whatever you like in the salad, my choices are obviously just a guide but for what it’s worth it was really tasty and I’d suggest starting with this.  Steak and blue cheese would be a good combo as well if you prefer, or a veggie version would work great with roasted Mediterranean vegetables.
 
I’m synning these at 1 syn per pot only because the pesto is 1/3 a syn per portion and I was slightly over generous with the feta.  Remember whatever cheese you use to take it from your HEA allowance or syn it!

This makes four portions.  I know there are only three in the pictures, but I ate one and had the rest for lunches!  I wouldn’t recommend leaving it longer than that anyway as there’s chicken/rocket and feta in there.  Day three was good still but I wouldn’t do a day four – it’s time for something else.

Ingredients

Now just add what you like.  As a guide this is what I used, my measurements are random but this really was a ’use it all up’ recipe

Pasta cooked and cooled – use the portion guide on the packet depending on how hungry you are and how many you’re cooking for.  A tip tough, when your pasta is cooling sprat with frylite, it will stop it sticking together and clumping

1 bag rocket
I small packet cherry tomatoes halved
1 pepper seeded and cut into bite size chunks
Slimming world sausages sliced into bite sized chunks
Baked cold chicken (mine was piri piri) cut into bite sized chunks
Feta cheese (use your HEA)
1 tablespoon low fat green pesto (mine is from Tesco)

Method

When the pasta is slightly warm put in a large mixing bowl, add the pesto and mix thoroughly and set to one side to finish cooling.

As the pasta is warm it is easier to coat the shapes but if it’s cold don’t worry, just be sure you don’t have any big dollops in there.  I added my pesto to cold pasta and it was fine, but I did make a note to self that it would’ve been easier beforehand

Now add everything else except the feta and mix until everything’s evenly blended.  Then add your feta and mix again – this way stops the feta chunks from being broken down too much...that’s it!

Divide into your lunch box portions and pop in the fridge – it doesn’t get much easier than that!
