The ingredients below makes six slices which is one portion, I always double up and make two days’ worth at a time as they keep just fine in an airtight container in the fridge for a day or two
Ingredients
40g oats (HEB)
2 eggs
1 carrot cake muller light (1/2 syn)
25g sultanas (3.5 syns)
½ tablespoon syn free sweetner
1 heaped teaspoon mixed spice
1 large carrot
1 orange (juice and zest)
Method
Pre heat oven to 180 or gas mark 6
In a large bowl mix the oats, eggs and muller
light until combined

| Mix all ingredients thoroughly |
Lightly spray your slice baking tray or use
silicone muffin cases if you don’t have a baking tray that works (please don’t
use paper cases as the buns stick). My
tray was from Amazon and not expensive at all

Bake at 180 for about 25-30 minutes or until
golden brown

These carrot cakes are absolutely delicious
warm but just as good cold. My plumber
ate most of mine from my first bake and I had to remake them to take to work for
my breakfast. Apparently they don’t
taste like ‘diet’ food and he kept having to try another to make sure I wasn’t
lying to him 😊
Nope, they’re healthy carrot cake and they
get a seal of approval – taste tested!
