Carrot Cake Slices

These low syn carrot cake slices are about ¾ a syn each when you use the oats as your HEB.  The syns are from the Muller Light and sultanas which are optional – but I like them so they stay in for me!

The ingredients below makes six slices which is one portion, I always double up and make two days’ worth at a time as they keep just fine in an airtight container in the fridge for a day or two

Ingredients

40g oats (HEB)
2 eggs
1 carrot cake muller light (1/2 syn)
25g sultanas (3.5 syns)
½ tablespoon syn free sweetner
1 heaped teaspoon mixed spice
1 large carrot
1 orange (juice and zest)

Method

Pre heat oven to 180 or gas mark 6

In a large bowl mix the oats, eggs and muller light until combined

Add the rest of the ingredients and grate the carrot and orange zest into the mix, stirring until the mixed spice, orange and carrot is evenly distributed (I use a large grater for the carrot and micro grater for the orange zest)

Mix all ingredients thoroughly
Lightly spray your slice baking tray or use silicone muffin cases if you don’t have a baking tray that works (please don’t use paper cases as the buns stick).  My tray was from Amazon and not expensive at all
Evenly distribute to make your carrot cake slices
Bake at 180 for about 25-30 minutes or until golden brown 

Low syn carrot cake
These carrot cakes are absolutely delicious warm but just as good cold.  My plumber ate most of mine from my first bake and I had to remake them to take to work for my breakfast.  Apparently they don’t taste like ‘diet’ food and he kept having to try another to make sure I wasn’t lying to him 😊
Nope, they’re healthy carrot cake and they get a seal of approval – taste tested!
