I admit it, this sounds like a disgusting idea but trust me,
it really isn’t! I love frittata as it’s
a magical way to mix everything you want to use up with a few eggs, spices,
plonk cheese on the top et voila, a delicious and quick meal but I wasn’t
really sure this time as I’ve never used lentils in a frittata and wasn’t sure
how it’d go but I’d decided with some spiced minced beef it would have enough
bulk to work - and it did.
Unusually for me the ingredients are measured in cups as
that’s a bit more forgiving – I just used what I had in the fridge topped up
with some things from the freezer but you can use pretty much anything you
want, this is great with tuna and sweetcorn, chilli, Bolognese, chicken and
bacon – you get the idea.
As long as you have eggs, spices, cheese and something to
fill the frittata you’ll will get a really tasty meal so be bold and go for it
This makes one 9” round tin serving from which I’d say you’ll
get 6 portions.
If this is too spicy for you then reduce the hot spices but
I’d add an extra teaspoon of chicken seasoning instead so it’s still tasty and
is syn free unless you decide to make your own and throw in something like a
ton of chirozo!
Ingredients
5 eggs
1 tablespoon Italian herbs
2 teaspoons smoked paprika
1 teaspoon hot chilli power
1 teaspoon dried chili flakes
1 teaspoon chicken seasoning
Pinch of salt and pepper
1 can lentils in water (washed and drained)
1 cup 5% minced beef cooked and cooled – I season this when
I cook it
1 cup roasted veggies – I make these in big batches and
freeze so this was a defrosted portion
45g grated mature cheddar
Method
Pre heat oven to 200 degrees or gas mark 6
Add eggs and spices to bowl and whisk

Next add everything else but only half the cheese (you’ll sprinkle
the rest on top)

Mix it all up and ignore the fact it looks nasty!
Spray your tin with low calories spray but make sure this
tray does not have a removeable base, if it does the egg mix will leak out and
it’ll be a total mess
Carefully tip your mixture into the tin and lightly press
down. I poke the ingredients about a bit
so they’re evenly distributed if needs be, especially the roasted veggies as
they tent to clump
Sprinkle the extra cheese on the top and some additional Italian
herbs if you’d like

Cook for about 45 minutes or until cooked through. When I cook mine I make a foil ‘tent’ for the
first 25 minutes so it’s covered but the foil doesn’t touch the frittata to
give it a good chance to cook without burning on the top. After 25 minutes I take the foil tent off and
pop it back in the oven to cook and brown
Serve immediately with your choice of sides, I had salad
with mine but syn free chips and salad would be great and beans would work too
