I love corned beef hash, it’s always been something I didn’t
think I could have and stick to plan, it may have taken a while but I think I
nailed it.
Corned beef is the only syn here so it depends what you use
and how much of the hash you eat at once so I listed below the syns so you can
work out what yours is:

Lean corned beef is 1.5 syns per 100g
·
Basic corned beef is 3 syns per 100g
These ingredients make a huge pan full and whilst that’s a
technical portion description I’m saying six portions so with basic corned beef
that’s two syns a portion, lean would be one syn
Ingredients
1kg baby potatoes cut into chunks, bigger than bite size maybe
three pieces per potato
400g corned beef
Red/green/yellow pepper:
you need about one pepper in total but mix the colours so it looks nice
2 large red onions diced
6 mushrooms cut small
Italian herbs
Salt and pepper
2oz grated cheese (from your HEA)

Method
Pre heat the oven to 200 degrees C
You don’t need to peel your potatoes, just wash and chop
into chunks. Put in a pan with cold
water and bring to the boil. Boil them
for five minutes, drain and leave in the sieve to steam
Once the potatoes have steamed for about 10 minutes they
will be cooler and dry. Spray frylite onto
your baking tray and put them into the tray, more frylite on the top and some sea
salt, give them a shake and pop in your pre heated oven for 25-30 minutes until
they’re cooked through and lightly golden
While the potatoes are cooking chop your veg ready

When potatoes are ready tip into a large bowl and press them
with a fork to break them down into hash sized chunks, mine were mostly
squashed but I left some big chunks for texture
Spray a large pan with fry lite and cook the onions first,
just a few minutes until they start to become translucent
Add the corned beef, peppers and mushrooms and cook on a
medium heat squashing the corned beef chunks so they break down a little
When cooked, add the corned beef and veg mix to your
potatoes, add the grated cheese and Italian herbs to taste. I added a heaped teaspoon, I didn’t add any
more salt as the potatoes had sea salt and corned beef is already quite salty
but try the mixture and add that, pepper to even some chilli flakes to your
personal taste

You’re almost done now, just spray a large frying pan with
frylite and tip the whole mash mixture in, press down and put on a medium heat
for about 5 minutes, you want to brown the hash, I like it slightly charred in
places as I think those are the best bits so I cook it slightly longer, maybe
7-8 minutes

Once that side is cooked pop it under a medium grill to
brown the top, maybe 5 more minutes and you’re ready to serve immediately

You can put the pan in the table and have a family style brunch,
you can turn out and serve with eggs and maybe beans, salad – whatever you like
and you can even warm and mix with eggs to make a frittata – this is so versatile
and tastes even better the next day (if there’s any left that is!)
