Pesto Chicken & Sausage Tray Bake

This can be almost syn free, the pesto is 3.5 syns for a tablespoon and it’s all about the sausages.  I’ve found over time that they are a very personal choice and it’s pretty much whatever you want, just syn them if they’re synn-able!

These (in the photo) are not diet sausages, they’re Heck pork sausages as I refuse to have ones I don’t like, I’d rather have less of something I do and add more veggies to fill me up.  Whichever way you go this is a really easy, one pot meal that everyone can enjoy

As with most of my meals, you’re welcome to swap and change to your own personal taste but I’ll tell you what I did and you can change it from there

 Ingredients

4 Chicken breasts or 8 thighs (skin, bone and all visible fat removed)

Low fast pesto

Sausages (synned if necessary)

Baby potatoes

Veggies to roast (red onion, peppers, garlic, tomatoes, mushrooms – whatever you would like)

Fry lite (I used garlic)

 

Method

Pre heat oven to gas mark 7, 350 degrees

Spray your baking sheet with low calorie spray

Cut your potatoes into bite sized chunks and throw in the tray.  If you’re using meat sausages cut them into chunks too as no-one wants under cooked sausages and pop in the oven for 15 minutes

While the potatoes and sausages are cooking prep your chicken by removing any fat and spreading a tablespoon of low fat pesto per portion.  Thighs are smaller so use half on each and have two in a serving, set to one side

Cut your veggies into bite sized chunks and set aside

If you’re using garlic you can peel the cloves now

After 15 minutes take the potato and sausages out of the oven and turn over, add the chicken and veggies (apart from tomatoes and mushrooms) plus garlic if using and spray well with frylite and put back in the oven for 20 minutes

After 20 minutes take the tray out and turn/move items so everything cooks easily and add your tomatoes and mushrooms if using, they take less time to cook so go in last.  Spray again with fry lite and put back in the oven for 10-15 minutes until everything is cooked through

Serve immediately
