This is a very easy recipe but if you’re making the crushed potatoes as I did, you’ll need a bit more time. You can always leave them as simple boiled potatoes and the meal will be quicker but I wanted the salty, garlicky potatoes, so it took a little longer
Ingredients
1 x Salmon fillet per person
Baby new potatoes – however many you want to be satisfied and not stuffed full!
Veggies (whatever you like)
Soy sauce
Lime juice
Dried chilli flakes
Fry lite (I used garlic)
Sea salt
Method
Boil a pan of lightly salted water and add your baby new potatoes, skin on and cook for 15-20 minutes until they’re cooked through. Turn out into a sieve, pop the sieve back on the pan and leave the cooked potatoes to steam and dry
Heat oven to gas mark 6
Cut a piece of foil so it’s large enough to make a parcel around the salmon and lay the fish in the middle. Drizzle with soy sauce and add a squirt of lime juice, topping with dried chilli flakes. I used about 2 teaspoons of chilli flakes but I like spicy food, you can use as many or as few as you like. You could use dried herbs if you’d prefer. Fold the foil into a parcel and put on one side of a baking tray leaving the other side empty.
Lightly spray the empty side of the tray with fry lite and tip your cooked baby new potatoes onto it, next to the salmon parcel, and gently crush with a potato masher or a fork. Once they are crushed spray with fry lite (I used the garlic one) and season with sea salt
Put the tray in the pre heated oven for 15 minutes
After 15 minutes take the tray out and open the salmon parcel, give the potatoes another spray with fry lite and put the tray back into the oven for another 15 minutes or so until your salmon is cooked through
When you have about 7 minutes to go until the salmon is ready, bring a pan of water to the boil and cook your veggies. I had asparagus and tender stem broccoli which literally takes 3-4 minutes to cook. I put the broccoli in first and give it a minute or so head start and then add the asparagus spears
When they’re done put in your sieve over the pan to keep warm and take your baking tray out of the oven. It’s time to assemble!
I put the crushed potatoes on the plate and lay the salmon fillet on the top, placing my veggies on the side as this is how the meal was served to me but you’re very welcome to serve however you like
