You can use pretty much any fish with this, I just happened to randomly have a cod fillet in the fridge as well as precooked rice and some veggies. Everything needed using so I threw it all together to make a super quick dinner
Ingredients
Fry lite (I used the stir fry version for this meal)
2tbsp Soy sauce
2 tbsp Oyster sauce
1 fish fillet (not breaded or anything like that, just plain fish)
1 cup pre-cooked rice
Mixed veggies (I had onion, pepper and sweetcorn – probably ½ a cup worth but I often add water chestnuts, bamboo shoots and broccoli)
Salt & pepper
Spring onion – optional
Method
Heat fry lite in a wok and stir fry veggies, set to the side
Grind some salt & pepper on each side of the fish to taste
Re-mist the wok with fry lite and over a medium heat cook the fish for a few minutes on each side until cooked through, set aside with veggies
Again, re-mist your wok and add your cold rice, turning until heated through
Once the rice is warmed through put the fish and veggies in the wok with the soy and oyster sauce. I broke my fish fillet up into flakes so it was throughout the dish. If you’re using prawns/chicken/veggies then you won’t need to do that
Cook over a medium heat, turning so it doesn’t stick and burn until everything is hot and the sauces are evenly distributed throughout the dish
While the meal is cooking cut your spring onions. I top and tail them before removing the outer layer of the onion and then cut them diagonally into discs. You don’t have to cut them on the diagonal, my Dad always told me it looks better and that is the single reason I do that!
Once the rice dish is ready, spoon into your bowl and sprinkle spring onion on the top
Serve immediately
