Keep Cooking!

OK, everyone is reaching for the fridge door, the wine, chocolate or maybe all or it – including me – and while I’ll all for being kind to myself I’m going to have to step up and focus or buy a new wardrobe so it was time for some time in the kitchen and prepare some of my favourite healthy options to get back on track

I like to multitask but I also like to make things that use a lot of the same base ingredients so I can use ingredients up and also only do jobs once

You’ll see that I made keema and peas but also spicy rice to get rid of the frozen peas plus I made a slow cooker kebab to use the other half of the mince from the keema.  It just makes sense to me to do as much as I can at once and have more time to enjoy it

So in an hour I’d made a doner kebab and popped it in the slow cooker to do its thing, I’d got rice simmering, chicken baking in sauce plus a pot of keema on the stove; quick clean down and I made two types of baked oat muffin:  orange and cranberry with pumpkin seeds and banana nut walnut with a  few sultanas.  OK, they are not the healthiest versions of the baked oats but I figured that was ok!

As you can see, there’s absolutely loads there and apart from the oats it can all be frozen (once cooled) and I’ve mix and match meals for days!
