Pesto Chicken with Roasted Sausage & Veggies Tray bake

This is a really simple meal to make, very little prep and only one tray to wash – what isn’t there to like?

It’s only 3.5 syns for the low-fat pesto if you have syn free sausages but just be sure to add in any syns if needs be

When the weather’s cold and miserable like it is now this is a real go to meal for me, it’s filling and has as many veggies as you can get on the tray plus it saves in an airtight container for a couple of days for quick and easy meals in the week


 

Feel free to add more veggies if you want, I didn’t the first time I ate it but later in the week I did to change the meal up a bit and be more interesting.  Broccoli, asparagus and some carrots would be perfect to add colour and texture

Quesadilla’s

So a quesadilla is basically a cross between a toastie, a pizza and a wrap – and if that’s not a good enough reason to have on I just don’t know what is!

It’s not the most syn friendly thing you can eat and even with your HEB and part HEA it’s still 6 syns but it’s a really decadent use of those syns as t’s really a satisfying crunchy, cheesy tasty meal.

 Over time I’ve tried a few different methods of cooking it and think now this is by far the best way to allow the quesadilla to be crispy and have a hot filling.  There’s loads of options so I listed a few below but feel free to try your favourites and see what you think, I’m sure I’ll add more too!
