Low Syn Asian Inspired Beef Stew

This slow cooked beef stew is packed with delicious Asian flavours which infuse the meat over the cooking time.  I found that the meat absolutely melted and adding the veggies after  time meant they retained their texture and didn’t turn to mush

Low Syn Beef stew - Asian Style
It’s so easy and the perfect meal for these cold, rainy day days and at only 2 syns a portion you can have a sneaky second helping!

Chilli Chocolate Bites

I absolutely LOVE these little bites.  They’re ¾ syn each but, unlike the usual slimming style cakes, actually feel like a cake.

They’re very decadent tasting, really chocolatey and have either a warm chilli tingle or a kick – depending how heavy handed you are with the crushed chilli flakes!   I’ve found there’s always one bun that has more chilli in than the others and it’s a great delight when it’s not me that gets it.

Yes, at 3/4 syn each these are higher in syns than a lot of the things I make but they’re really good for something different or like me if you have a friend also on SW coming for coffee and cakes.

Low Syn Chilli Chocolate Bites
Try them while they’re still warm, they’re like chocolate brownies and some of the chocolate chips won’t have totally melted.  Delicious.....

Diet Coke Chicken

This must be one of Slimming World’s most classic meals, I was reluctant to try it at first as it sounded gross but eventually I got over myself and gave it a try, it’s very good as long as you don’t add too much liquid.  Unlike the traditional recipe, I don’t add passata - I don’t think it needs it and boiling dinner away to thicken the sauce just makes me imagine the chicken drying up and becoming like little bullets so my version uses tomato paste instead to give the base flavour without a load of liquid.

This meal is fridge to table in about 30 minutes so a great go-to choice when you want to have something healthy but not spend all evening prepping and cooking plus as it’s syn free it’s an even better call.

Syn Free Diet Coke Chicken

As you can see, I added peppers and onions for no reason apart from the fact they were in the fridge and needed using so I did.  Made no difference to the flavour but did bulk the meal out a little with healthy stuff so a bit of a bonus
