Syn Free Miso & Soy Salmon

The other day I fancied something a bit different for dinner, I love salmon and usually have it with soy and chili with lime but during a recent trip to Tesco I’d had a poke about the World Food section and found some miso paste.  It’s been years since I had miso and I seem to remember it was soup, really salty and mildly flavoured so I decided to give it a try.

Just in case I didn’t like it I mixed with some dark soy and baked, the result was an almost blackened, salty, slightly Asian tasting salmon hat was absolutely delicious!  OK, I admit that description is as random as to not be helpful in the slightest but it’s sort of the best I could do.  It is salty, but I don’t use much salt so to me using soy and miso will be, the balance with the flavor of the salmon was perfect and I used the veg I had in the fridge to make a stir fry to which I added a splash of dark soy as well to pull it all together.  I could’ve added noodles as well but I’m keeping my carbs down.

 This is a quick, incredibly easy dinner that requires very little effort and is ready in 30 minutes.  I can highly recommend giving it a try, if you want to the recipe is here….I will be having it again really soon!
