Pork & Sundried Tomato Meatballs

Saw these at Tesco the other day, they’re a Weight Watchers pre-made meal.  I don’t eat pre-packaged food but I thought they sounded interesting so I made them as a snack.

It’s 1 syn for all 12 meatballs which I’m pretty happy with (that's for the sundried tomatoes).

They’d be great in a passata based sauce with extra veg, herbs and some chillis but I didn’t want to mess about doing all that, I had the nibbles, wanted something savoury and fancied giving them a try.  They’d be great as part of a tapas meal as well – they’re not dry as pork can sometimes be and the sundried tomato really gives them flavor.

Pizza on a Wrap – Syn Free

I think weight Watchers wraps have to be anyone on Slimming World’s best food friend.  I use them to make pies, pasties, sausage rolls and now pizza!

Syn free pizza on a wrap
Admittedly tuna and prawn pizza is not everyone’s idea of pizza heaven but you can do anything, whatever your favourite is just go for it.  Remember things like pepperoni have to be synned and so does your wrap and cheese if you’ve used your healthy options for the day but this is a really quick, easy and low/no syn version of my very favourite food

If you try nothing else I think you should try this pizza, the recipe is here

Cajun Chicken Soy & Honey Kebabs

I wanted to try something different this week and had decide on chicken but had no idea what to do with it.  In the end I made a concoction up using what was in the cupboard and have to say this time it was a success.

These kebabs are not spicy (although they could be!).  It was like a mellow sweet and sour without the sour, which clearly makes no sense but if you try them you’ll get what I mean.

Apart from the marinading, these are super quick to make and a really good way to have extra veggies with your meal.  I especially like peppers and onions that are blackened so for me it was a treat.
Low syn chicken, soy & honey kebabs
At 2 ½ syns for all four kebabs they’re a perfect go to for a light lunch with salad but you could just as easily serve with syn free wedges or even a spiced rice…or all of that at once!

If you want to give them a try the low syn Cajun chicken honey & soy kebab recipe is here

Syn free mini boozy baked oat muffins

Taster ideas:  syn free mini boozy baked oat muffins

Syn fre G&T baked oat mini muffins
These are my mini boozy baked oat muffins are the same recipe as my baked oats (scroll to the bottom for flavor variations) which, as your HEB, are syn free.  Usually the mixture makes 6 normal sized muffins, but for taster or sw party nights the same mix makes 24 mini muffins.  Topped with quark and a little lime they were a hit for sure!

I get the G&T flavouring at Sainsburys, there's prosecco too which when topped with quark and a raspberry are just as much of a hit.

If you want to try these for your next taster or even when you have friends round the basic recipe is here

Deconstructed meatball & halloumi kebabs

Anyone that knows me knows that every Friday my best friend comes over for dinner and I try some concoction out on her.  Some are more successful than others but she’s a brave soul and rolls with it.

I don’t always have time to make something elaborate and one of our favourite go to dinners is my ‘from the freezer deconstructed kebabs’.  It couldn’t be much easier as it’s syn free sw meatballs and halloumi on a bed of cous cous with roasted veg.

Low syn meatballs and halloumi deconstructed kebabs
Halloumi is not syn free, you can use your HEA or you can syn it depending on how much you use/eat.  I like halloumi (a lot) so it's staying in my kebabs but reardless they are still low syn, quick an deasy so a winner in my home.

To be honest, it’s not really a recipe but how I make this and timings are here

Slow Cooker Caribbean Pepperpot Stew

I like meals that are easy to make but taste great, not a great surprise.  This syn free pepperpot stew is exactly that.  Apart from browning the beef you pretty much throw everything into the slow cooker and leave it alone, come back in 7 hours and you have a delicious, spicy meal ready to go.

You can adjust the veg to your personal taste, same with the spices.  I like spicy so I’ve got a green chilli in there but you don’t have to.  The basic recipe with lend itself to most tastes.

2 syn Raspberry Ruffles

I love these super sweet coconut(ty) bombs but even for me two is enough.  They're really similar tasting to the ones you can get in the shops but clearly mine are very erm, far more rustic!

To get them at 2 syns you need to drizzle the chocolate, unlike my first go - where I dunked the ruffles, that was fine but it gave me six thick yummy chocolate ones and six naked ruffles - not really what I was going for but as this was prosecco number two it didn't really matter.

They're a great treat, indulgent for a slimming world friendly, sweet so if you want to give them a try the recipe is here
