My parents recently came over for a visit
which is always great as it challenges me to put together something a little
different for our meal.
Same issues as most of us have, everyone
has different tastes and requirements; I eat Slimming World friendly food, my
Mum is a vegetarian (who occasionally has a bacon butty and chicken!!) and Dad
loves lamb but doesn’t have it at home as Mum hates the smell.
Challenge accepted!

Ignore the fact that this is all shoved on
the side in the kitchen, the weather was beautiful and we had a party outside
in the garden but for my Greek inspired dinner I served these dishes, links to
the recipes are added in case you want to try anything:
Shop bought low fat hummous
Halloumi fries
Chicken skewers (no they are not Greek, but
I added oregano and lemon and winged it!!!)
Needless to say, it was all really well received
and we all enjoyed different parts of the dinner.
More than anything I just want to share
that you can have beautiful food that tastes great as well as caters for all
different food requirements whist still eating healthily
