KFC style chicken

I’ve done syn free KFC style chicken once before with cous cous (recipe here) and decided to try it with smash instead.  When I did the cous cous one I found the coating to be a bit thick and not so authentic, smash is a far better option in my opinion. 

You double coat the chicken with this version and dry bake with just a squirt of fry lite and whilst clearly it’s not KFC in it’s fatty, oily yumminess it's a really good option for dinner, lunch or picnics as it’s good cold too.
