Meatball and Veg Lasagna with Courgette Sheets

This syn free lasagna is super filling and packed with speed foods, garlicky red sauce and meatballs with courgette slices instead of pasta sheets.  
 

Well, that was the plan but it doesn’t always work like that!  

It ended up more or a layered meatball and veggie bake with a melted cheese top.  On reflection I could have maybe done to make the courgette layer thicker with more slices.  Regardless, it was still really good although I fear it doesn’t look it!

As far as a syn free dinner goes, this is simple, uses whatever veggies you have to hand and tastes great so it’s definitely worth a try.  The recipe is here
