KFC Style Syn Free Chicken

I’ve been on a bit of a mission to come up with some different party/picnic/finger food ideas for the summer.  Over the winter I tended to make chilli, stews, that type of thing but now the weather’s started to get better I wanted to think about slightly lighter foods that can go on my salads but also be in the fridge for when I get a bit peckish.


These KFC style chicken nuggets are perfect really.  They’re slightly spicy and really good hot but you can have them cold just as easily and they don’t taste any different really.  I’d suggest a SW BBQ sauce as a dip or some passata and put some chilli flakes and mixed herbs in before warming through.

I had veggies and a few actifry chips with mine as I didn’t have the dips to hand, it wasn’t as dry as maybe it looks.  Oh, and let me be super honest, I had wayyy more chicken than this photo shows, I just had to make room on my plate first!!!!

Syn free Weetabix cookies

Today it’s all about the cookies.  As anyone that knows me can attest to, I pretty much always eat Weetabix muffins for breakfast (unless I’m at my parents when only my Mum’s bacon butty is happening) so it was a big deal for me to decide to try using my Weetabix for something else - but I could be tempted for cookies!!

 These Weetabix cookies are syn free if you use as your heb, bear in mind that if you’ve already had it they’re 6 syns per batch and if you add anything not syn free you need to syn that too but a portion makes 6-8 cookies and they’re still low enough to have more than one!!!


So they couldn’t really be more simple, Weetabix, sweetener, milk and an egg with whatever flavourings you like.  I made a few different types to try; the orange and ginger are really good and syn free but for two syns the chocolate are yummy.  I added coconut essence to one batch and salted caramel to another but orange would’ve worked too.  If you want to give them a go the recipe is here

There wasn’t one cookie flavor I made that I didn’t like (yup, I ate them all!!!).  If I had to pick I’d say the chocolate were the best but there’s not a lot in it and as with these things it depends on your personal taste.  I’ll see what other combinations come to mind and add them as I try them out.

Smoked ham wrapped crustless quiches

I have to own up, I absolutely did not want to try the crustless quiche, all I could think when it was mentioned in class was that it was a nasty, eggy bomb and missing pastry which was the best bit of the quiche anyway.  That was until one of the ladies at work, who is also on slimming world, brought one in for me to try.  
 
Yes, I waited until she left my office to eat it in case it was nasty and I had to throw it away and fake enjoying it…but after all that whining I really, really enjoyed it.  Helped massively by the fact she wrapped it in smoked ham which made them like little yummy omelet pockets.

I’ve made them a couple of times now and everyone likes them, they’re great for a quick lunch as pretty much any leftover meat or veggies can be thrown in and you can make them to cater for different tastes, personally I add ham, cheese, onion and pepper but it’s whatever you want.

It's tapas time!

Recently I was chatting to a friend about afternoon tea and how I’ve never done that and wasn’t really sure I’d want to, they’re not very Slimming World friendly and I don’t like mayo so I’m kinda in trouble really but we decided there was a gap in the market for savory afternoon teas.  This lead into a more in depth discussion as to what we could have and to cut a long story short I wanted to make some savory bites that would work for afternoon nibbles, parties and that type of thing.  

Obviously I wanted these treats to be little flavor bombs so they’re going to need marinating in some cases – I’ve found that removing the fat can remove flavor so it’s got to be replaced with herbs and spices.  Yes, this is more faffing about than opening a box of starters from Tesco but that’s ok, sticking to the diet whilst having tasty food that non diet friends can enjoy is very, very worth it.

So I have a few to share with you to try, I’ve yet to have anyone say they’re disgusting but that could be my friends are too polite!  Anyway, give them a try and see what you think, I’ll keep adding to them and combine them all on a tapas/party nibbles page to make it easier.  So far we have:

Syn Free Miso & Soy Salmon

The other day I fancied something a bit different for dinner, I love salmon and usually have it with soy and chili with lime but during a recent trip to Tesco I’d had a poke about the World Food section and found some miso paste.  It’s been years since I had miso and I seem to remember it was soup, really salty and mildly flavoured so I decided to give it a try.

Just in case I didn’t like it I mixed with some dark soy and baked, the result was an almost blackened, salty, slightly Asian tasting salmon hat was absolutely delicious!  OK, I admit that description is as random as to not be helpful in the slightest but it’s sort of the best I could do.  It is salty, but I don’t use much salt so to me using soy and miso will be, the balance with the flavor of the salmon was perfect and I used the veg I had in the fridge to make a stir fry to which I added a splash of dark soy as well to pull it all together.  I could’ve added noodles as well but I’m keeping my carbs down.

 This is a quick, incredibly easy dinner that requires very little effort and is ready in 30 minutes.  I can highly recommend giving it a try, if you want to the recipe is here….I will be having it again really soon!

One year on

So it’s here, my one year anniversary at Slimming World and in those 52 weeks I’ve gone from a size 22 to a size 10/12 and lost just under 7 stone.

 
It’s been an incredible journey and not one I was really expecting when I decided that I was going to lose weight.  At 43 I’ve tried loads of times and never really managed more than a few pounds and I don’t think anyone, including me if I’m honest, thought this would be much different but I’d moved to a new area and decided to combine my weight loss goal with meeting new people and maybe making a friend or two.

I remember joining the local Slimming World group, I’d texted the class leader and specifically asked if they were friendly - which I’m sure made me sound like a mad woman.  She was right when she said yes, I’m very fortunate to have met some really lovely people in class over the last year and we’ve helped each other when losing weight has seemed almost impossible.  There are a few of us that sit together in class, we cook for each other and I even have a Black Country ‘Mum’ on a Tuesday night.

My first goal was to lose 3 stone.  After being heavy for almost 20 years I never thought I’d get there but in my first week I lost 5 pounds and never really looked back.  I stuck to plan and was really strict, annoying most of the people around me in the process.  The easiest way to tell my friends and family was to just say I didn’t eat anything with more than 5% fat as that’s simple to cater for and less scary to people than explaining the ins and outs of syns! 

I had a lot of weight to lose, my BMI was 44 and I was in the morbidly obese category.  I got out of breath going up stairs, struggled to cross my legs and was always afraid that I wouldn’t fit in the seats at restaurants.  My bottom was so big I once knocked a glass of wine over when I got up to leave a restaurant….there are so many stories like that, as well as small things that cross your mind and hold you back...will I fit into the seat on the plane, can I find a jump suit when we’re go karting, am I the biggest person in the room…it’s been strange as those barriers fall away and I can say them out loud to people.  Friends that have always been slim seem amazed at the things bigger people worry about.

But I got there, I lost the 3 stone and it took a few short months but I still didn’t look like I’d hoped, Beyonce I was not so I reset my target and kept going. At 5 stone gone I thought maybe I was done but my body still lost so I kept going, at 6 stone I knew I was pretty much there and I adjusted my target one final time to 6 ½ stone off.  It was a desperate struggle to get to that final target so the class leader and I agreed this was clearly a natural point for me and I’ve stayed hovering around this loss for a couple of months now.

Sometimes people tell me it was easy and I never know what to say.  It isn’t easy, not at all, and it never was.  There isn’t really a secret (unless you can count being incredibly stubborn).  For me I found being in a routine helped me so much, I had a ‘set’ breakfast which everyone that knows me knows is weetabix muffins and a huge bowl of fruit.  Lunch is always a salad with meat and a Muller Light and dinner is usually meat and veggies of some sort.  I pretty much cut out fat, carbs, booze, Haribos and chocolate and something tells me I was an absolute bear to deal with but for the most part people were great.  Don’t get me wrong, not everyone was supportive and I’ve had some really unhappy surprises where people are jealous, feel threatened or just plain mean and it might have caused some tears along the way but it didn’t stop me.  I think the strangest thing is that we are all judged by our appearance, whether we like it or not and it’s been an eye opener to see how people are different towards me now, bear in mind I am the same person I was 7 stone ago so when I hear ‘I’m not fat-ist but I would NEVER have asked you out before but do you want to go for a drink’ even I was too stunned to come up with a suitable reply that didn’t contain swearing.  But that’s other people and the ones that truly cared about me then care about me still. 

As the weight dropped off I found I could move more, I wanted to and took up fencing.  I’m now the proud owner of a custom sabre sword and am proud of the bruises I get from my weekly sword fighting.  I can run 5k without giving it a second thought and regularly achieve my 10,000 steps a day to make my FitBit happy.

So one year down the line I did it.  I’m healthier, happier and in my mid 40s I achieved a milestone.  I lost 7 stone.  I couldn’t do it alone and I didn’t have to, I had people that helped me every day and to them I will always be grateful…someone said to me the other day that they’d never met anyone who’d lost this amount of weight and I was an inspiration.  I don’t think I am but I’m helping anyone that wants to become their own inspiration which to me is the key.

Whatever your own weight loss journey all I can say is plan, don’t be afraid to say it’s difficult and be kind to yourself – it’s not an easy thing to do but you can do it, I promise.

Almost syn free Thai Chicken Curry

I love curry and I also love quick meals that look and taste great but don’t leave me stuck in the kitchen all night (I drink all the wine when I'l left on my own!!!).  

This Thai curry is absolutely perfect.  It’s 1½ syns a portion (from the Muller Lights), creamy and tasty, has as much of a kick to it as you like think it looks great.  Can’t really argue when all said and done!

When I made this at the weekend it took about 15-20 minutes from start to finish, which is the time it’d take the local takeaway to deliver to the house and doesn’t come with the free side order of syns and guilt!!!

This curry would be just as good with fish, prawns or even a firmer white fish like cod, so I added a little suggestion at the bottom of the recipe if you wanted to give thaht a go, I’ll try making one over the next couple of weeks and let you know how I get on.

For extra speed foods you can add steamed green beans or a quick stir fry or red peppers and onions with garlic and a pinch of cury powder on the side.
